The Canadian Cats and Easy Rider threw down a Challenge this week for a food that Dad really loved and would eat any chance he could. He grew up in the family diner so there were a lot of choices, but he always loved Moms Wednesday Menu Goulash. (How about that!) It was not gourmet but it was a tasty filling meal. |

Super Easy Ground Beef Goulash Ingredients: 1 lb Ground beef 90% lean 1 ½ cup noodles uncooked (About ¼ 16oz box) 1 ½ 16oz cans tomato sauce 1 cup beef broth Cooking oil. Olive, Peanut or choice Salt, Pepper, Oregano, Sugar (or sweetener per label equivalency) and Sage (Optional)
1. Bring approx 2 qt water to full boil and add a bit of ⅛ tsp salt (Optional) and 1-2 tbs oil. Add pasta. Normal cooking time is about 9-11 minutes depending on altitue. Cut back about 2 minutes what you would normally cook, rinse, drain and set aside in colander. Your oil prevents them from sticking. 2. In a pot brown ground beef and then pour off grease. There will not be much if you use 90% lean but if you use much less add a bit more meat as you will have more shrinkage. 3. Add tomato sauce and beef broth and bring to a simmer. Add spices. ¼ tsp pepper, ¼ tsp salt, 1 tbs Sugar, 1 tbs oregano. If you use fresh oregano maybe ½ tbs. Dad adds two tbs but he likes it that way. A way to be adventurous is to add a slight pinch of sage. If you are not fond of it no worries. 4. Simmer sauce for 15 to 30min. Longer is better for yummy. Sample as simmering and add salt and pepper to taste. 5. Add Pasta to sauce and bring back to a simmer at least 5 minutes to cook the pasta the rest of the way. You may need to add a bit extra broth but water is fine so you have a nice consistency. 6. Makes about 6 servings. Enjoy. It is really fast and simple. You can also use a packet of Chili Mix if you like instead of adding your own spices. For milder tastes use Meatloaf Mix. Dad likes his with a bit less pasta and sauce with more meat. This is an easy recipe to “tweak” till it is just how you like it. |

I told Dad to fill the bowl up but he said this was "a normal person serving." So figure on 4 nice servings. It is really easy to add meat, pasta and sauce if you want to make for a gathering or some such. If we ever have those again that is |

This reminds my Mom of something she makes that's easy peasy with hamburger and noodles. Hamburger stroganoff....burger, sour cream, can of cream of mushroom soup, over noodles. Sometimes the BESTEST STUFF is the SIMPLEST STUFF! Timmy I'm sorry your second opinion resulted in nothing. Still don't know what's wrong with you but I'm glad you're eating again.

that sounds yummy!!! You know what secret ingredient I often add to tomato sauce? CINNAMON!!! Yep!! Not a ton but it gives it some nice flavor. I also add red pepper flakes and sometimes a bit of BBQ sauce or even Maple Syrup! (just a little) I like my tomato sauce on the sweet side :)
