First some drinks. All you need is some Tequila and let the fun begin. I was gracious enough to allow this celebration on Rump Day so I am doing double drinks today! |
Dads Mexican Fiesta
Ingredients:
1lb. Ground Meat. (We like 90% Beef but you want something else try it.)
2 Packages Taco Seasoning. (Want to make your own have at it.)
1 Package Flour Tortilla. (You want bean sprout with cheese curd tortillas have at it.)
Eggs
Red Ripe Tomato (There is nothing worse than un-ripened.)
Refried Beans (Can you Unfry beans?)
Sour Cream
Salsa

1. Dice tomato and drain.
2. Brown meat adding 1 1/2 pack of seasoning. Pour off fat
3. Re-heat beans in a pan
Ready - Set - Go

Burritos: Put Tortillas on plate and spread refried beans, add meat, tomatos and cheese. Roll and top with Sour cream and/or salsa to taste.

Huevos Rancheros: Same as above but do not roll and instead top with two eggs cooked as you like them. Want sour cream and salsa have at it

Quesadilla: Spread thin layer of Refried Beans, meat and cheese on tortilla and place flat in a hot pan. Place a second tortilla on top. Cook about 2 minutes and flip for another 2 minutes. Cut in 1/4s. Want to fold them instead have at it, but, then just eat a tortilla as there is not much room in there. Top with lots and lots of sour cream.
